Ingredients
- 850 gbread flour
- 1 tbsphoney
- 2 tbspolive oil
- 14 gdry yeast
- 450 glukewarm water
- 2 tspsalt
Instructions
- 1
In the bowl of a stand mixer, combine the 450 gwater, 14 gyeast, and 1 tbsphoney. Mix briefly and let sit for a few minutes.
- 2
Add the 850 gflour and 2 tspsalt, then add the 2 tbspolive oil.
- 3
Knead on slow/medium speed until the dough becomes smooth and elastic and pulls away from the sides of the bowl, about 10–12 minutes.
- 4
Form the dough into a ball and let it rise until doubled in size, about 1 hour.
- 5
Deflate the dough and divide it into balls of approximately 120 g each.
- 6
Roll each ball into a rope and join the ends to form a bagel. The hole should be fairly large, since it will shrink considerably as the bagels rise.
- 7
Let the shaped bagels rise until doubled in size.
- 8
Bring a large pot of water to a boil.
- 9
Carefully place the bagels into the boiling water. Once they float, remove them.
- 10
Let excess water drain off, then place them on a baking tray.
- 11
Bake at 180 C° until the bagels are nicely browned and have reached your desired level of doneness.
