- ½ cupSugar
- 1¼ cupsAll-purpose flour

Instructions

Thaw the 2bananas. Gently drain off some of the excess liquid released during freezing, then mash the bananas well with a fork.
- 2
In a bowl, mix the mashed bananas, 2eggs, ¼ cupoil, and ½ cupsugar until well combined.
- 3
Add the 1¼ cupsAll-purpose flour, 1 tspbaking powder, and ¼ tspbaking soda. Mix just until there are no obvious lumps of flour. Avoid overmixing.
- 4
Fold in the ⅓ cupchocolate chips or chopped nuts, if using.
- 5
Pour the batter into a greased approximately 9 × 5-inch (23 × 13 cm) loaf pan and spread it evenly.

Bake at 170°C (340°F) for about 30–35 minutes. Start checking at 30 minutes. It’s ready when a toothpick inserted into the center comes out clean or with just a few moist crumbs.

Let the cake cool in the pan for about 10–15 minutes.
- 8
Remove it from the pan and transfer it to a wire rack. Let it cool completely before slicing.
